Octopus with endive and aromatic herbs

Ingredients

octopus
garlic
thyme branches
Bay leaves
olive oil
butter
endive
half a lemon
salt
pepper

Preparation

Boil the octopus together with bay leaves, 2-3 cloves of garlic and a few sprigs of thyme for 80-90 minutes.

Add olive oil to a pan, 2 cloves of garlic, thyme sprigs and then add octopus. Cook for 5 minutes on each side and season with a little salt and a little pepper.

Slice each endive into 2 and cook them in a pan with olive oil, a little butter, a few minutes on each side. At the end, add salt, pepper, the juice of half a lemon and that's it!
