Greek eggplant and sweet and sour chicken


For Greek Eggplants:
2 peeled and chopped tomatoes
2 eggplants
a chopped onion scales
a tablespoon of oil
the juice of half a lemon
a tablespoon of dried oregano
3 cloves of garlic
100 g of feta cheese

For the Sweet and Sour Chicken:
500 g of chicken breast
200 g canned pineapple
a chopped onion into larger pieces
one red, yellow and green pepper cut into larger pieces
200 ml of canned pineapple juice
2 tablespoons honey
2 tablespoons soy sauce
2 cloves of garlic
a tablespoon of oil
a tablespoon of cornstarch
100 g of tomato juice
the juice of half a lemon


Let's start with the Greek eggplant recipe.
We will put the onion in the frying pan Tefal ActiFry Genius XL over which we will add a tablespoon of oil over which we add salt and pepper.

Select the program 8 and 5 minutes cooking time. After 5 minutes, add the diced eggplant and cook for the same program for another 10 minutes.

After 10 minutes, add the dried oregano, garlic, tomatoes, lemon juice and cook for another 10 minutes.

At the end we add the feta cheese and cook everything for another 5 minutes.

For the sweet and sour chicken, we will start with the sauce. In a bowl put the pineapple juice, soy sauce, lemon juice, tomato juice, honey, grated garlic cloves, cornstarch and 100 ml of water, then mix everything.

In the frying pan add the vegetables and the chicken breast. Season with salt and pepper and add a tablespoon of oil. Select the program 7 and 15 minutes cooking time.

After 15 minutes, add the diced pineapple and the sauce, cooking everything for another 15 minutes.
