Sugar-free ice cream with strawberries


250 g mascarpone
500 g strawberries
400 ml coconut milk
100 g of honey
1 tablespoon vanilla essence (optional)


We will start by adding the strawberries in a tall container and we will pass them using the vertical mixer Tefal QuickChef until we get a fine puree and homogeneous. In a larger bowl, add mascarpone, honey and vanilla essence, which is optional, then mix well using a whisk. Over this composition we will add coconut milk, incorporating it well. At the end, add the strawberry puree and mix until you get a perfectly homogeneous composition. Transfer the composition evenly into the ice cream molds, add a stick to each and put them in the freezer for at least 2 hours.
