Roll of meringue and strawberries
250 g mascarpone
200 ml whipped cream
6 egg whites
200 g caster sugar
50 g powdered sugar
200 g strawberries
50 g chopped almonds
a teaspoon of vanilla essence
a little salt
For starters, we will take care of the meringue, so we will first beat the egg whites with a little salt. Mix the egg whites until they become frothy, adding the sugar little by little.
Transfer the meringue to the oven tray and level it, add the chopped almonds over it and then put the tray in the preheated oven at 140 degrees for about 30 minutes.
After 30 minutes, remove the tray from the oven and let it cool for 5 minutes, then remove it from the pan and carefully remove the baking sheet.
Prepare the cream, adding whipped cream, mascarpone, powdered sugar and vanilla essence. Mix everything until you get a fine and aerated cream.
When the meringue has cooled completely, we will add the cream over it, in a thin layer and the sliced strawberries, then we will roll it lengthwise.
After we have formed the roll, we will put it in the fridge for about 2 hours.
