Duchesse potatoes with cream cheese


For potatoes:
100 g butter
2 yolks
1 kg of potatoes
a little nutmeg

For cream cheese:
200 g sweet cottage cheese
100 g cream
100 g of Telemea cheese
6 dried tomatoes
1/2 bunch parsley


1. Boil the potatoes and add a little salt. Let them boil for about 20 minutes (until they are very well cooked). Take the pot off the heat and drain the water. Add the butter and mash the potatoes using the sieve foot of the Infiny Force Ultimate vertical mixer to obtain a very fine puree.

2. When the puree has cooled slightly, add the yolks and stir until completely incorporated. Season the mixture with salt, a little pepper and nutmeg to taste. Mix well and then transfer the composition to a baking dish. Form rosettes in a tray covered with baking paper. Place the tray in the preheated oven at 200 ° C for about 20 minutes.

3. Put the sweet cheese in the graduated glass, add the Telemea cheese and cream. Mix the mixture well with the stainless steel foot of the vertical mixer Infiny Force Ultimate . Add the dried tomatoes and mix until smooth. Add the greens and mix again.

Tip:You can replace parsley with dill or green onions
