Beaten beans with hardened onions


For the beaten beans:
500 g beans soaked overnight
2 carrots
2 onions
1/4 celery
1 parsley root
1 parsnip root
1 sprig of thyme
1 teaspoon mustard
3 cloves of garlic
2 bay leaves
2 tablespoons oil

For hardened onions:
3-4 tablespoons of oil
4 onions cut into scales
200 g of tomato juice


To cook the beans we will use the electric pressure cooker Tefal One Pot and we will start by adding the beans in the pan, then the carrots, onions, celery, parsnips, parsley, thyme sprigs, bay leaves, salt and water with 3 fingers over the beans. Close the pot lid and select the pressure cooking program and 30 minutes for the cooking time.

Strain the boiled beans and put it in a large bowl, over which we will add the oil, grate the garlic cloves, season with salt, pepper and add a teaspoon of mustard. Now we have nothing left but to pass the beans very well, adding water as needed, using a vertical mixer.

To prepare the onion, we will add the oil to the pot, along with the onion, salt and pepper, then select the Simmer function (simmer), lasting 15 minutes.

After finishing the program, open the lid of the pot and add the tomato juice, mixing well, then cook everything for another 5 minutes.

At the end, add the onion over the beans and serve.
